Veroni's Mortadella Esselusso can be called Mortadella Bologna PGI (Protected Geographical Indication), which is only awarded to producers of these salamis who follow the discipline of the typical Emilian product. Diced fat and a mixture of salt and spices are added to the minced meat: the mixture is then baked. Veroni's Mortadella Esselusso does not contain gluten, lactose, glutamate, added polyphosphates and GMOs. The organoleptic characteristics highlight a pink color that alternates with the pearly white of the fat; it is delicate on the palate and its excellent quality is noticeable.
