Description

This is a type of pork sausage flavoured with finely-chopped chillies. The Ventricina is typical of the rustic culture in Abruzzo. The tradition was based on raising the "little family pig", a piglet bought about a year before being slaughtered, which was put out in the field with other animals and fattened up on barley and corn flour.
